I hope all of you have a wonderful holiday with family and friends. We are enjoying ours with great friends. No pumpkin stew this year, but we will have some yummy things.
Our menu will consist of a turkey, since our friend is making it, corn casserole, carrot casserole, overnight salad, and ranchy mashed potatoes. We will have a pumpkin roll for dessert. The pumpkin roll is off of the can of Libby’s pumpkin. I made it before and it is really good. I look forward to eating it again! Here are some of the recipes for the other things.
1 lb of carrots (cooked and mashed)
1 small green pepper
1/2 cup of milk
1/3 cup of sugar
1 cup cracker crumbs (1/2 for topping)
1/2 cup of soft butter
salt and pepper
Mix all of the above together except the butter and crumbs. Put the butter and crumbs on top and bake for 30 min. on 350.
1 head of lettuce
1 head of cauliflower – broken into small pieces
1 bunch green onions – sliced thick
1 lb of crisp fried bacon – crumbled or tear into small bits
1/3 cup parmesan cheese
Layer as listed above.
Dressing: 2 cups of mayo or miracle whip with 1/4 cup sugar added. Spread over layered ingredients. Let salad sit overnight in refrigerator. Toss just before serving.

Packet of dry ranch dressing mixed into the mashed pototaoes.
